Rum drenched plantain

Method 

Slice the plantain into small chunks and cook in a small amount of oil until browned.

Stir sugar, rum, (we use Mount Gay) and butter together and put in the microwave for 2 minutes.

Place plantain slices in rum sauce, sprinkle with cinnamon, and sauté in a frying pan for a couple of minutes until plantains are golden brown and tender.
